Monday Night Meal: Italian Sausage Pumpkin Pasta

It can be tough to get back into a weeknight dinner routine, especially if you’re in a recipe rut. Our goal is to provide you with easy dinner ideas. We call it our Monday night meal. Five Eyewitness News Anchor shared how to make, Italian Sausage Pumpkin Pasta, which is the perfect dinner idea on a cold winter day.

1lb pasta like Rigatoni
3/4 can of canned unsweetened pumpkin
1 lb Hot or Sweet Italian sausage— Hillshire Farms Brand is best for this dish.
1 generous Tablespoon Olive oil
3 cloves garlic
1 average sized onion
6 to 8 sage eaves
2 cups chicken stock
About 1/2 cup of cream
A dash of cinnamon and sprinkle of nutmeg Red pepper flakes, salt, pepper to taste.


Prepare pasta per package.

Dice and sauté onions and garlic and olive oil until translucent.

Add sausages removed from casings to onions. Break up and brown.

Then add 6 sage leaves chopped and cinnamon. Cook 1 to 2 minutes.

Add stock and pumpkin. Stir medium heat. Until it comes together 4 minutes or so.

Take off the heat add cream stir then add pasta.

Salt, pepper, red pepper flakes to taste.

Top with remaining sage leaves and dash of nutmeg.
