Autumn Inspired Recipes

Owner of Golden Fig Fine Foods, Laurie Crowell, stopped by the TCL kitchen with some fall inspired recipes like apple salsa, wild rice salad and more.

Crunchy Apple Salsa

2 honey crisp apples
1 small onion-chopped
1 red bell pepper-finely chopped
1 C loosely packed cilantro-chopped
1 TB chili in adobo sauce, chopped
1 tsp lime juice
1 tsp lime zest
1 tsp. Cider syrup
Salt and pepper to taste
Mix all ingredients, season to taste

Wild Rice Salad with Sweet Tangos

3 C cooked wild rice
1 C chopped sweet tango apple
1/2 C chopped dried cherries
1/2 C loosely packed parsley- chopped
1/2 C loosely packed basil- chopped
*Cider vinaigrette
1/2 C toasted pecans
1/2 C chevre  crumbled

*Cider Vinaigrette

3 TB Cider Vinegar
2 tsp coarse ground mustard
1 TB orange juice
1 tsp maple syrup
1/2 tsp cinnamon or Apple Pie Spice
1/3 C good quality olive oil
Salt and pepper to taste

Place ingredients in a jar and shake until emulsified.
Toss together all ingredients except pecans and chevre.
Right before serving, stir in pecans and chevre.

Apple Almond Galette

12 inch pie crust
3 medium honey crisp, sliced
3 tsp brown sugar
1 tsp almond paste
1 tsp vanilla bean paste
2 tsp cinnamon or Apple Pie Spice, divided
Juice of 1 lemon
Pinch of kosher salt
1 TB cold butter cut into little pieces
1 egg beaten with 1 tsp water
1 TB coarse sugar
Preheat oven to 400

Place pie crust on parchment lined baking sheet.
Toss apple slices with brown sugar,  crumbled almond paste, vanilla bean paste, 1 tsp. spice, lemon and salt
Arrange apples in middle of pie crust.
Fold crust over edge of apples, overlapping crust as you work about apples.
Mix remaining tsp of spice with coarse sugar.
Brush crust with egg wash.
Sprinkle spiced sugar over top and bake until lightly browned  (about 40 minutes).
Let cool and enjoy.
