Members of the Twin Cities Live office were challenged to come up with a recipe to jazz up a boring box of brownie mix. Twin Cities Live Producer, Lisa Adams made Triple Chocolate Avocado Brownie Bites and Twin Cities Live Photographer Drew Schingen made Beer Brownies.
Lisa’s Recipe : Triple Chocolate Avocado Brownie Bites
Betty Crocker Brownie Mix
Half of an avocado (mashed)
¼ cup almond milk
½ cup chocolate chip (assortment of milk, dark and white)
Add frosting on top if desired
Mix everything in a bowl and bake at 350 for 20 minutes in mini cupcake pan
Drew’s Recipe: Beer Brownies
1/2 cup butter, softened to room temperature
2 cups powdered sugar
2–3 Tablespoons reduced Guinness
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
one 12-ounce bottle Guinness Extra Stout
Pillsbury Chocolate Fudge Brownie Mix, 18.4 oz
½ cup Chocolate chips
Step 1: In a small saucepan, bring the Guinness to a boil over medium-high heat. Once boiling, reduce to medium heat and allow to simmer until reduced down to 2/3 cup, about 20-22 minutes. Set aside to cool for at least 10 minutes. You will use 1/2 cup in the brownies and the rest in the frosting.
Step 2: Preheat the oven to 350°F and grease a 13×9 inch pan or line with parchment
Mix dry and wet brownie ingredients
Pour into pan sprinkling Chocolate chips over pan
Bake for 30 min
Step 3: Frosting: Beat the butter on high speed until completely smooth and creamy. Add the powdered sugar, beating on low at first then increasing to high speed. Once creamy, beat in 2 Tablespoons of reduced Guinness, vanilla extract, and salt. Frost cooled brownies.
