12 oz (uncooked) macaroni
1/4 c. Butter
1/4 c. Flour
2 c. Milk or half and half
1 tsp Dynamite Herbs
Salt and pepper to taste
3 C shredded mixed cheeses (gouda, cheddar, mozzarella, chevre)
Cook macaroni according to directions. While macaroni is cooking, melt butter in medium saucepan.
When melted, stir in flour and Dynamite Herbs and cook for a few minutes.
Slowly whisk in milk and cook until sauce thickens. Add salt and pepper and stir in cheese…stirring constantly until cheese melts.
Pour cheese sauce into noodles and stir to coat. Check seasoning and adjust accordingly. Serve hot with a few shaves of parmesan on top. Add chopped tomatoes, sauteed broccoli or even rotisserie chicken before serving if you want a more substantial meal.
