Easy Weeknight Raw Tomato and Mozzarella Pasta Toss
Prep Time: About 30 Minutes
Cook Time: About 20 Minutes
Serves: 4 People
½ Pound Orechiette Pasta
4 Large Tomatoes
2 Garlic Cloves, grated
½ tsp. Salt
½ Cup Extra Virgin Olive Oil
2 Balls Fresh Mozzarella, diced into ¼” size pieces
1 Cup Fresh Grated Parmesan
½ Cup Sliced Fresh Basil + Extra For Garnsih
Bring a large pot of salted water to a boil. Following the instructions on the package boil the pasta. When cooked to al dente – or to your liking – scoop out about a cup of the pasta water and set aside and then drain the pasta.
While the pasta is cooking prepare your pasta sauce.
Slice the tomatoes in half and using the wide tooth side of a boxed grater, grate the tomato. Grate the inside fleshy side of the tomato directly into a bowl or a sheet pan so the tomato and liquids are all collected. Stop grating when you get to the skin of the tomato so you don’t cut yourself!! Repeat the process with the remaining tomato halves.
Next, scoop the tomato pulp into a mesh strainer over a bowl and allow the access liquid to drip out for about 10 minutes.
After 10 minutes discard the tomato water – or save for another use – and pour the tomato pulp into a bowl adding to it the grated garlic, olive and salt. Stir to combine.
When the pasta is ready and the sauce is read you can toss it all together in this order: Add pasta to a serving bowl; pour the raw tomato sauce over the pasta and stir to combine; add the mozzarella cubes, followed by the parmesan and last the fresh basil. If you think the pasta needs to be a little “looser” add a bit of the cooking water to the dish and stir it up!
Once it is all combined taste the dish and add more salt and fresh cracked pepper if you think it needs it and last but not least garnish with more basil for looks and serve with parmesan cheese on the side!
