Ann Ahmed has a reputation for putting a unique twist on twist on traditional Southeast Asian food. She recently opened up a new restaurant in Golden Valley called, Lat14. Lat14 is an Asian Eatery serving a variety of Southeast Asian Foods. She stopped by to share more about these delicious dishes.
46g of sliced shallots
20g of garlic
50g of sliced lemon grass
8 keffir lime leaves
20 Thai chilies
15g of Salt
1.6 lbs of boneless chicken thighs
10g of Fish salt
80g of soaked sticky rice (add this to a blender and puree with 1 cup of water)
840g of water
70g of soaked black fungus
155g of fresh dill (will be put into the stew right before plating)
50g of sliced Green onions (Will be out into the stew right before plating)
- In a food processor ( add the sliced lemon grass, shallots, garlic and Thai chilies, pulse to a paste).
- Add about ½ cup of oil into the pan, add the paste and Sautee until slightly brown and then add the cubed chicken thighs.
- Season with salt, keffr lime leaves, and fish sauce.
- Add water and mushroom then bring to a boil, finish with dill and green onions.
- Serve with steam rice.
