Laurie Crowell was one of our first guests who appeared on Twin Cities Live! She’s now back for her 250th episode to make dinner for our Monday Night Meal Series. She shared how to make “Quick Tuscan Chops.”
4-6 thin sliced pork chops
1 TB olive oil
Salt and pepper
1 tsp butter
1 small onion, thinly sliced
1/4 C chicken stock
1/3 C Sundried tomatoes in oil, chopped
1 can cannellini beans, rinsed
Parmesan cheese, optional
In 12 in pan, heat olive oil over medium heat.
Salt and pepper chops and cook 1 1/2 minutes per side.
Remove chops from pan and increase heat a little.
Add butter and onion and sauté 1 minute, add stock, Sundried tomatoes beans and sauté 1 minute.
Return pork chops to pan and cook until desired doneness.
Plate and top with a few shaves of parmesan if desired.
