Entertaining Ideas from Love that Olive

With so many events getting cancelled this summer, we’ll be doing a lot more small-scale entertaining with family and friends. That means we’re on the lookout for fun, fresh, creative ideas. Terri Chaffer of Love that Olive has terrific suggestions.

Shrimp & Maple Bacon Sandwich
(Chicken can be used in place of shrimp)

8 slices bacon
1 lb. raw, cleaned, and deveined shrimp, (may substitute chicken breast)
2 Tbsp.*Sweet Cream Butter EVOO
3 Tbsp. *Stanley’s Maple BBQ Sauce
¼ C. Mascarpone cheese
¼ C. shredded Gouda cheese
fresh spinach leaves
baguette, cut horizontally, then in 4 sandwich size pieces
8 Tbsp. *LTO Onion Balsamic Jam (2 Tbsp. per sandwich)


Maple Glazed Bacon

  • Oven method, In a 400˚ F. oven, lay bacon on a baking sheet lined with aluminum foil in one layer and cook until bacon is beginning to brown, about 20-25 minutes
  • Remove from oven and brush with Maple BBQ Sauce
  • Return to oven and bake until bacon is done to your liking
  • With tongs, transfer to a wire rack, then put the rack on the baking sheet to allow bacon to drain
  • Grill method, place slices of bacon on foil, cook over medium heat until slightly browned, about 5-8 minutes, remove from heat, brush with Maple BBQ Sauce, return to grill foil and cook until done to your liking.
  • Remove and transfer to wire rack, place foil under rack to catch drips
  • Place shrimp on aluminum foil and drizzle with 2 Tbsp. Sweet Cream Butter EVOO. Grill until done (till pink). May also use chicken
  • Mix Mascarpone and shredded Gouda together
  • Build your sandwich by slicing the baguette as directed
  • Brush bottom inside piece with Onion Balsamic Jam, 2 Tbsp. per sandwich
  • Top with spinach leaves
  • Top with shrimp or chicken
  • Add the bacon slices
  • Spread cheese mixture on the underside of the baguette top piece. Place baguette on top and serve
