It is strawberry season and Owner of Golden Fig, Laurie Crowell, stopped by with some recipes to help us celebrate.
Strawberry And Beet Salad
Vinaigrette –
2 TB olive oil
1 TB Basil Balsamic Vinegar
1 tsp honey
1 TB coarse mustard
salt and pepper to taste
Place ingredients in small jar and shake to emulsify
4 large beets, roasted
1.5 C fresh strawberries washed and quartered
handful of fresh basil, torn into smallish pieces
1/2 C crumbled chevre
In bowl, gently toss strawberries and balsamic with vinaigrette. Place into serving bowl and crumble chevre and torn basil over top.
Strawberry Salad with Chocolate Balsamic Vinaigrette
4 C mixed greens
2 C washed and quartered strawberries
1 thinly sliced shallot
1/2 C crumbled blue cheese
Vinaigrette:
2 TB olive oil
1 TB Chocolate balsamic vinegar
1 tsp honey
2 TB smashed strawberries
salt and pepper to taste
Place vinaigrette ingredients into a jar and shake until emulsified.
Place greens on plate
Top with strawberries. Scatter shallots around. Crumble blue cheese over and drizzle vinaigrette over just before serving.
