Getting your kids to eat your veggies isn’t always easy but our next guest has fun ways to add them into recipes and the best part your kids will love it. The Creator of “My Everyday Table” stopped by with tasty recipes for kids using lots of vegetables.
Green Spinach Pancakes:
1 cup white whole wheat flour
1/2 cup almond flour
2 tsp. baking powder
1 tsp. baking soda
pinch of salt
1 large egg
1 1/2 cups milk
1 cup baby spinach, packed (about 2 handfuls)
1 Tbsp. honey
1. Whisk together dry ingredients: flours, baking powder, baking soda, and pinch of salt.
2. Combine remaining ingredients in a blender and blend until smooth with no green flecks. (Or get them as small as possible.)
3. Whisk the wet ingredients into the dry ingredients.
4. Melt a pat of butter in a nonstick pan or griddle over medium heat. When butter sizzles, pour 1/4 cup of pancake batter and cook until bubbles form, about 1-2 minutes. Flip and cook another minute, or until cooked through.
