K-102 Radio Host, Amy James is a big fan of music but she’s also a big fan of cooking and trying new recipes. She stopped by the studio to make Gluten Free Nutritional Yeast Chicken Nuggets, which are perfect for a busy weeknight meal.

Nutritional Yeast Chicken Nuggets (GF)
2 boneless, skinless chicken breasts
SEASONING: Combine in a bowl:
1/3 Cup Nutritional Yeast
1/3 Cup Almond Flour
Add a little bit of rosemary
Salt and pepper to taste
Pre-heat oven to 400 degrees
Line a cookie sheet with tinfoil
Cut chicken into your desired nugget size
Mix seasoning and spread it on the chicken nuggets
Note: You could easily make a wash for the nuggets, mix together an egg and milk.
Cook for 20 minutes
Serve hot with any of the following sauces:
Ketchup
Mustard
BBQ
Honey
Aioli
Ranch
Slaw:
One bag of the broccoli slaw mix form the store.
Dump in a bowl
Cube 1/2 of a MN Honey crisp apple
Slaw Sauce:
1 TBSP Olive Oil
1 TBSP Vinegar
1 TBSP Mayo
2 TBSP Stonewall Kitchen Sriracha Aioli
Very coarse salt and a few grinds of pepper.
Drizzle sauce over the slaw.
Stir and serve.
