Close your eyes, imagine the Caribbean life, Jamaica, a Red Stripe in your hand. But don’t pack your bags just yet, instead check out Pimento Jamaican Kitchen in Downtown Minneapolis. The owner, Tomme Beevas stopped by to show us how Jerk Seasoning can be done right.
Simple Jerk Chicken
To make one whole chicken
First – Dry rub:
1 tbsp ground allspice
1 tbsp black pepper
1 tsp salt
1 tsp ground cayenne pepper or red pepper
1 tsp sugar
1 tbsp all purpose seasoning
Second – Wet rub:
6 stalks scallion
6 sprigs thyme
1/2 cup soy sauce
2 tomatoes
1 onion
1 whole Habanero peppers with seeds
1 whole lime squeezed
1 nugget of ginger — blend together and apply after dry rub.
Third – Let marinate overnight
Fourth – grill on charcoal (or with Pimento or your favorite wood if available) to 160 degrees.
Serve over rice or a slice of hard dough bread with a cold Red Stripe or Rum Punch.
