Chef Daniel Green from CRAVE stopped by to show us how to make a vegan version of their citrus chipotle tofu salad! The recipe traditionally includes grilled blackened tofu, roasted corn, black bean salsa, romaine and pepper jack in a chipotle roasted red pepper vinaigrette topped with crispy tortilla strips and fresh lime. You can swap out smoked cheddar for pepper jack and a lemon shallot vinaigrette for the chipotle version to make the dish vegan.
