Sweet & Salty Workout Snacks

Fitness Expert Nickie Carrigan of The Warehouse stopped by with some tasty yet simple workout snacks.

Pesto Pepper Egg

Ingredients:
-Red Peppers
-Pesto
-Egg
-Olive Oil
-Whole Grain Bread

Steps:
1. Slice red pepper in half and clean out ribs and seeds
2.Brush all sides with pesto
3.Crack and egg inside
4. Bake in oven at 400 degrees for 15-20 minutes until cooked through and yolk is desired hardness
5. Serve with one slice of whole grain toast and olive oil

Healthy Carrot Cake Muffins

Ingredients:
3 cups shredded carrots
1.5 cup rolled oats
12 slightly beaten eggs
4.5 tsp baking powder
6 tsp cinnamon
1 tsp nutmeg
3 tsp vanilla extract

Steps:

-Mix together and blend until smooth
-Pour equal amounts into muffin tin and bake for 20-15 minutes at 350 degrees
