Baking Instructor Nancy Berguson showed us how to make dessert fruit pizza – how fun is that!
Preheat oven to 375 degrees.
Make your own sugar cookie dough or use store bought, refrigerated sugar cookie dough
1 8-ounce package cream cheese
2 tablespoons granulated sugar
1 teaspoon vanilla extract
¼ cup seedless jam-your choice of flavor
Sweetened flaked coconut
Sliced, fresh fruit or drained canned fruit.
Press cookie dough into a round pizza pan or 9-inch diameter cake pan. Bake crust for 20 minutes or until golden brown; cool completely.
Combine cream cheese, sugar and extract in a large bowl and beat until light and fluffy.
Spread cream cheese mixture over crust.
Spread jam over cream cheese.
Decorate with your fruit and sprinkle with coconut.
Vegetable oil for frying
Whipped topping-make your own whipped cream or use thawed Cool Whip
Large strawberries, sliced
Mint leaves for trim-if desired
Pour enough oil in a saucepan or fry pan to come up ¼ inch on the sides.
Heat oil over medium-low heat.
Working with one wonton at a time use tongs, to submerge wonton into hot oil, frying until golden brown, about 15 seconds on first side and 10 seconds on the second side.
Transfer to paper towel to drain.
While wontons are still warm sprinkle with cinnamon and cool completely.
Place 4 wontons on work surface.
Spread about 1 tablespoon of whipped cream over each.
Arrange 1 sliced strawberry and 2-3 raspberries over whipped cream topping on each wonton.
Spoon 1 tablespoon of cream over the top of berries and top with another wonton/berry mix.
Repeat the layering 2 more times.
Garnish with mint leaves if desired.
