Chef David Fhima is opening a new restaurant in downtown Minneapolis in late summer 2018. And in honor of the Minnesota State Fair, he used the Great Minnesota Get Together as inspiration for a couple dishes you can make at home.
Fhima’s Minneapolis is expected to open in September 2018.
Fhima’s Grilled Cheese with Moroccan Shakshuka 1 loaf of your favorite bread (Preferably organic bread/brioche bread from reputable artisan bakery. If you make it yourself, even better!) I like to use and one of my favorite breads to make, Pain de Mie Slice bread into 1 inch thick slices (set aside) Other Ingredients 1 slice of gruyere cheese 1 slice of Swiss cheese 1 slice of provolone cheese 1 Tbsp of Mornay 1 Tbsp Moroccan shakshuka (Optional- if not preferred, use another Tbsp Mornay 1 tsp high smoking point oil (preferably ricebran oil) 3 tsp grass-fed butter Melt 1 tsp butter in oil Assemble sandwich: 1 Tbsp of Mornay on one slice of bread 1 Tbsp of shakshuka on another slice of bread Add 3 slices of cheese in between Rub outsides of sandwich on each side in melted butter/oil mix Heat sautée Pan Add 1 tsp of butter At medium heat sauté sandwich When golden brown, add another tsp of butter and turn sandwich, heat on medium until golden brown Lower heat, cover pan for 3-5 minutes or until cheese is melted Cut and serve Recipes for Mornay and Shakshuka will be available at www.fhimasmpls.com Ultimate Chocolate Chip Cookie 8oz butter 12oz sugar 2 eggs 16oz flour 1 teaspoon salt 2 teaspoon baking soda 12oz chocolate chips 1/4 cup apple sauce Mix all dry ingredients except chocolate chips together Place butter and sugar in mixer and mix until fluffy Add eggs in one at a time Add in apple sauce Scrape down the sides of the bowl Slowly add in the flour Scrape the sides and bottom of the bowl and add chocolate chips Let chill before portioning and baking Makes 3 dozen cookies
