Recipe Developer, Mary Jane Miller stopped by to make Almost Instant Sausage and Lentil Soup.
Almost Instant Sausage and Lentil Soup
Prep time: 10 minutes
Ready in: 35 minutes
1 lb. smoked sausage, cut in half and sliced
1 medium bell pepper, chopped
3 carrots, chopped (about 1 1/2 cups)
1 (14.5 oz.) can diced tomatoes
1 cup lentils
4 cups reduced sodium chicken broth

2 Tbsp. chopped dry shallots or onion
2 bay leaves
2 Tbsp. olive oil
1 tsp. garlic powder
1 tsp. salt
1/4 tsp. ground pepper
4 cups baby spinach
Toss everything into an Instant Pot. Lock the lid in place and turn the vent knob to “sealing”. Press the “manual” button on high pressure and set the timer to 10 minutes. It will take about 15 minutes for the pot to heat up and come to pressure, then the timer will start.
Twist the vent knob to “venting”. Stir in spinach, allow it to wilt and adjust seasoning.
Makes about 6 cups
Note: You can make this recipe on the stovetop in a large pot. Bring it to a boil, reduce heat, and simmer for about 35 minutes, or until lentils are tender.
