It’s Day 5 in our 12 Days of Cookies series and today’s recipe is for the chocolate lover. Elizabeth visits “Something Sweet by Maddie Lu” in Coon Rapids to make a Hot Chocolate Cookie topped with toasted jumbo marshmallow.

Hot Chocolate Cookies
12oz chocolate chips
1/4 tsp salt
1/4 cup cocoa
1 3/4 cups ap flour
1 1/4 cup brown sugar
1 1/2 tsp baking powder
1 tsp vanilla
10 large marshmallows
Melt butter and chocolate chips and allow to cool
Combine dries in a bowl and set aside
Cream brown sugar, eggs, vanilla until smooth
Add in the melted chocolate mixture
Add dry ingredients slowly
Chill for 1 hour
Scoop into 1.5in balls and bake 10 minutes at 300 degrees.
Cut the marshmallows in half
Pull cookies out of the oven and place a half marshmallow on top
Put back in the oven and bake an additional 3-4 minutes
