Swedish Crown Bakery owner, Eva Sabet shares her favorite Swedish waffle recipe along with delicious sweet and savory toppings you can add to it.
Swedish Waffles (Crispy on the outside, crepe like on the inside)
1 cup flour
2.25 tsp aluminum free baking powder
1 cup milk or dairy free milk
1/2 cup water
3/4 cup soda water
2 sticks melted salted butter (keep 2 TBSP for brushing waffle iron)
2 TBSP sugar
Start with melting the butter. Combine all the dry ingredients into a mixing bowl. Now add milk, water and soda water to the flour mix, use a whisk and mix until lump free. Now add the melted butter and fold gently until all the butter is incorporated. Heat the waffle iron on high. When iron is hot brush with melted butter and pour the batter up until the edge of the iron. Be careful not to over fill. Let it sit for 30 seconds before closing the top. Bake for 2-3 minutes or until crispy golden brown. Serve with favorite topping.
Whipped cream strawberry or blueberry jam or jam of choice.
Whipped cream with fruit compote.
Whipped cream with apples, cinnamon & walnut.
Flavorful and simple waffles: add vanilla or cardamom to the waffle batter.
Top the crispy waffles with sugar or powdered sugar.
“Nordic Waffles” sour cream, smoked salmon or any other smoked fish & red onions. (Substitute with small cooked Greenland shrimp)
“Russian Waffles” sour cream, caviar and red onions.
“Breakfast Waffles” add cheese and ham to the waffle batter and bake top with sour cream
