Original Girl Scout Cookie

1 C butter, room temp
1 C sugar
2 eggs, well beaten
2 TB milk
1 tsp vanilla
2 C flour
1 tsp salt
2 tsp baking powder
more sugar for topping

  1. Preheat oven to 375 degrees
  2. Cream butter and sugar
  3. Add eggs, then milk.
  4. Stir in flour, salt and baking powder
  5. Refrigerate 1 hour

Roll dough into log, slice, sprinkle with sugar and bake 8-10 minutes until lightly browned.

 

Thin Mint Cake Bites

1 pkg thin mints
2/3 pkg cream cheese
1 tsp. vanilla bean paste
chocolate chips for melting

Instructions:

  1. Buzz up cookies in blender or food processor until fine
  2. Stir powdered cookies in with cream cheese and vanilla bean paste.
  3. Make into 25 rounds and refrigerate 30 minutes.
  4. Dip in melted chocolate and enjoy.

 

Peanut Butter No Bake Pie

Peanut Butter Pie

 

Crust:

Preheat oven to 350 degrees

1 pkg Girl Scout Peanut Butter Sandwich Cookies
6 TB Melted butter
1 tsp. Vanilla Bean Paste

Buzz up cookies in blender or food processor. When powdery fine,  stir in melted butter and vanilla bean paste. Stir well with a fork. Firmly press into pie dish. Bake for 5-7 minutes until lightly browned. Cool completely.

Filling:

8 oz. cream cheese – at room temp
1 C creamy peanut butter
1 tsp. vanilla bean paste
1/2 C powdered sugar
1 tsp fresh lemon zest
1 8-9 oz tub of whipped topping

With electric mixer, beat cream cheese, peanut butter and vanilla bean paste together until well blended. Add in lemon juice and powdered sugar and mix well.

Stir in whipped topping. When well mixed, spoon into cooled crust. Carefully spread around.

Drizzle with a little peanut butter if desired.

Chill several hours before serving.
