Slow Cooker Sweet Potatoes
Ingredients:
Sweet potatoes
Instructions:
Wash and dry sweet potatoes
Place in slow cooker
Cook on low 8 hours or on high for 4 hours
Serve with butter, salt and pepper
Honey Butter Pork Tenderloin
Ingredients:
5 TB Butter
3 TB honey
2 lbs pork tenderloin (be sure silver skin is trimmed)
Kosher Salt, freshly ground pepper
1/3 C apple cider or chicken stock
Instructions:
Preheat oven to 350 degrees
Melt butter and honey in oven safe pan
Salt and pepper tenderloin and add to pan.
Cook until bottom side is browned (about 4 minutes depending on thickness of pork)
Flip and cook other side until similarly brown.
Place pan in preheated oven and bake 8-10 minutes until cooked through. Reduce heat if honey begins to burn
Remove pork from pan and cover.
Place pan back on burner, turn heat to medium and stir in stock or cider.
Scrape lose all browned bits and stir until reduced by about half and a nice sauce has resulted.
Slice pork and serve with a drizzle of sauce and sweet potato.
